If you know me, you know I love to cook and I'd say that I'm pretty decent at it. I just think that the way two ingredients that are so opposite like eggs and flour or chicken and spices can come together to create something totally new is magic. The way that a cake is made or the way a tiny bit of salt can season a whole dish just blows my mind and it's magic. Yes, okay, there's a small amount of science mixed in but, really, it's magic.
But sometimes I just don't feel like cooking because, let's be honest, motherhood and just life in general is tiring! So here's my cheater's dinner. It's easy, so tasty, cheap, and you can trick your kids into eating something a little healthier than chicken fingers.
Enter in, the flatbread pizza!! Amen, right?! Nom nom nom. But seriously, at any grocery store you can get plain flatbreads that are just ready for your toppings. My family happens to prefer the Flat Out Artisan Thin flat breads. You could make your flat breads on naans, pita bread, or even a bagel. Whatever you happen to like best. And then load those babies up with whatever toppings you want and you have a super easy meal that cooks in about 10 minutes! You just can't go wrong.
Today I decided to make a farmer's market run and walked away with a gorgeous watermelon, some corn and okra. Now, I've never made okra before. I've eaten it, usually deep fried, but I decided to roast some up with olive oil, salt, and garlic powder because they are super cheap. De-licious. I tell ya. And then on the side of that I had watermelon with feta. And of course, last but not least, my flatbread!
